Skillet Lasagna

A deliciously fast version of lasagna. All those yummy flavors cooked in one skillet – no oven or boiling water for pasta required! Serve with a fresh salad for a dinner the whole family will enjoy.

Ingredients:
1 (28-oz) can small diced tomatoes
water
1 Tbsp olive oil
1 small yellow onion, small diced
2 cloves of garlic, minced.
salt and pepper, to taste
1 pound ground beef (or ground meat of choice)
1 Tbsp no-salt-added Italian herb seasoning blend
10 lasagna noodles, broken into 2-inch long pieces
1 (8-oz) can tomato sauce
parmesan cheese
8 ounces ricotta cheese
fresh basil

Directions:
1. Place tomatoes in a 4-cup measuring cup. Add water until it reaches 4 cups. Set aside.
2. Heat oil in a large skillet (12-inches) over medium heat. Add onion, 1/2 teaspoon salt, and black pepper as desired and cook until softened, about 5 minutes. Add garlic and heat until fragrant, about 30 seconds. Add ground beef and cook until no longer pink, breaking into small pieces as you stir. Drain any extra fat. Stir in Italian seasoning.
3. Sprinkle broken lasagna noodles all over the meat mixture. Pour the tomato mixture and the tomato sauce evenly over the pasta and bring to a simmer. Reduce heat, cover, and simmer, stirring occasionally, for about 20-25 minutes, or until pasta is cooked.
4. Remove from heat and garnish with drops of ricotta cheese, parmesan, and fresh basil. Enjoy!
