Egg Roll in a Bowl

A quick, easy, and delicious week night dinner! This one skillet meal comes together in a flash with only a little bit of prep required.

Ingredients:
1 pound lean ground beef (or ground turkey, ground chicken, etc.)
1 sweet yellow onion, small diced
1 cup small diced fresh mushrooms (optional)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon hoisin sauce
2 cloves minced fresh garlic
2 tablespoons minced fresh ginger (or 1 teaspoon dried ground ginger)
1/4 cup low sodium soy sauce
1 (16 oz) bag coleslaw mix
1/2 cup matchstick carrots
4 green onions, thinly sliced, for garnish
sesame seeds, for garnish

Directions:
1. Heat a large skillet over medium heat. Add ground beef, onions, and mushrooms. Stir often, until meat is no longer pink and veggies are tender. Drain any fat.
2. Add sesame oil, rice vinegar, hoisin sauce, fresh garlic, ginger, and soy sauce to the skillet. Cook, stirring occasionally, for 1-2 minutes.
3. Add in coleslaw mix and matchstick carrots. Cook, stirring often, for 5-7 minutes or until veggies are crisp tender. Remove from heat.
4. Garnish with green onions and sesame seeds. Enjoy!
