Blistered Shishito Peppers

These blistered shishito peppers are the perfect finger food appetizer. They’re so easy to make and fun to enjoy. Slightly smoky from the char, you’ll find that most are mild… but one out of every ten might surprise you with a kick of heat!

Ingredients:
1/2 pound fresh shishito peppers (washed & well dried)
1 Tbsp vegetable oil
course salt, for sprinkling
1 lemon, cut into wedges

Directions: 
1. Heat a large heavy skillet over medium-high heat.
2. In a bowl, toss the shishito peppers in the oil until well coated.
3. When the skillet is hot, arrange the peppers in a single layer. Sauté the peppers uncovered, turning occasionally, until they charred and blistered, about 6 to 8 minutes.
4. Plate the peppers, sprinkle with salt (as desired) and serve with a squeeze of lemon juice. Enjoy!

Dipping Sauce (optional): Stir together 1/2 cup mayo, 1 Tbsp dijon mustard, and 1 tsp Sriracha. Refrigerate until ready to serve with blistered shishito peppers!
